Ayam Lemak Minang

This recipe is originated from West Province of Sumatra, Indonesia. Minang, is a short form for Minangkabau. They are also known as 'People of Padang' and Padang food is very famous around Asia. The recipe is then modified for a healthier choice

Ayam Lemak Minangkabau

Ingredients:

  • 800g chicken cut into 5 portions (skins and fats removed)
  • 100 g tomato cut into 5 portions
  • 6 pcs turmeric leaves sliced thinly
  • 2 pc lime leaves sliced thinly
  • 2 stalks of lemon grass
  • 250ml low fat/ skim milk (may also substitute yoghurt for thicker gravy)
  • 250ml water
  • 2 tbsps olive oil or vegetable oil
  • ¼ tsp salt
  • Red chillies and tomatoes for garnishing

Blended ingredients:

  • 10 pcs of shallots
  • 5 pcs of garlic
  • 2cm ginger
  • 2.5cm fresh turmeric
  • 20 pcs chilli padi
  • 10 pcs dried chillies submerged in hot water

Method:

  1. Heat up the oil and fry the blended ingredients for 5 mins and add the lemon grass
  2. Place the chicken, lime leaves and turmeric leaves. Add salt
  3. Place skim milk. Simmer the gravy for 10 mins until chicken is cooked.
  4. Add tomatoes.
  5. Serve with red chillies and tomatoes as garnishing
