Baked Louisiana-san Fish

A heartwarming and tasty meal.

Baked Snow Fish

Ingredients:

  • 750g Snow fish - cut into ten pieces

Marinade

  • ½ tsp Garlic - chopped
  • 1 tsp Cajun spice powder
  • ½ tsp Dried chilli flakes
  • 3 tbsp Water
  • 2 tbsp Light margarine
  • A pinch of salt & pepper each

Sauce

  • 1½ tbsp Sugar
  • 5 tbsp Water
  • 1 tbsp Kikkoman light soya sauce
  • 3 tsp Mirin
  • 1 tsp Light Miso
  • 1 tsp Dill - for garnishing

Method:

  1. Prepare marinade and pour over fish.
  2. Brush fish with light margarine. Place on a tray and bake for 10 -15 minutes or until cooked.
  3. Place baked fish on a serving plate and set aside.
  4. To make the sauce, heat sugar in the non-stick pan until golden brown.
  5. Add water and other ingredients.
  6. Boil and reduce sauce to 3/5 the volume, pour sauce over fish and garnish with dill.
