Fish Fillet

Fish Fillet

Ingredients:

  • 3 Tbsp olive oil
  • 1 1/2 lb thin fish fillets
  • Salt and pepper
  • Chopped fresh parsley leaves
  • Lemon wedges

Method:

  1. Adjust the oven rack so it's as close to the heat source as possible. Place a skillet beneath the broiler and preheat it for 5 minutes.
  2. Remove the pan. Pour in the olive oil, place the fillets in the oil, and sprinkle them with salt and pepper; return the pan to the oven to broil for 90 seconds to 2 minutes. The fish is ready when it's no longer translucent and the tip of a knife flakes the thickest part easily.
  3. Carefully transfer the fillets to plates with a spatula. Sprinkle parsley on them and pour the pan juices over them. Garnish with lemon wedges. (Makes 4 servings)
