Spinach and Mushroom Lasagne |

A wonderful food recipe for your whole family.

Ingredients:
- 250 g Spinach – fresh, chopped
- 150 g Fresh mushrooms
- 100 g Onions - diced
- 20 g Garlic - chopped
- ½ tbsp Fresh parsley - chopped
- 200 g Tomato coulis
- ¼ tsp Dried mixed herbs
- ½ tsp Dried oregano
- 15 g Grated parmesan
- 200 g Light mozzarella cheese
- 4 sheets Instant lasagna
- 3 tbsp Olive oil
- A pinch of salt & pepper each
Cheese Sauce Ingredients
- 30 g Light margarine
- 30 g Plain flour
- 250 ml Low fat milk
- 200 g Cottage cheese
- 20 g Light mozzarella cheese
Method:
- To prepare lasagna, cook the lasagna sheets in boiling water for 8 -10 minutes.
- Remove and put in cold water. Drain and reserve.
- To make the cheese sauce, melt the margarine in a saucepan. Add flour and mix well. Cook over gentle heat without browning.
- Gradually add milk and stir constantly over low heat until boiled.
- Stir in cottage cheese until melted. Set aside.
- Heat the olive oil in a cooking pan and fry garlic till fragrant. Add spinach.
- Stir spinach into the cheese sauce.
- Season with salt and pepper. Put aside.
- To make mushroom with tomato coulis, heat the olive oil in a cooking pan. Fry onions and garlic till fragrant.
- Add tomato coulis, mixed herbs, oregano, chopped fresh parsley and fresh mushrooms. Cook for 5 minutes. Set aside.
- To assemble lasagna, grease ovenproof baking dish with margarine. Put one layer of lasagna sheet in the dish.
- Spread the spinach and cheese sauce evenly over the sheet.
- Cover with another layer of lasagna sheet.
- Add mushroom with tomato coulis and cover with lasagna sheet.
- Continue making layers, alternating both sauces. Finish with spinach and cheese sauce on top.
- Sprinkle with grated parmesan and light mozzarella.
- Bake for 20 minutes in preheated oven at 180oC.
- Place under a hot grill till golden brown – optional.
- Serve hot with bread, salad or boiled vegetables.
