Susi Bun

Susi Bun

Ingredients:

  • 5 Red dates
  • 1 tsp Wolfberries
  • 3 Dried figs (makes 18)

Filling

  • 200 g chicken breast, minced
  • pinch of salt
  • pinch of pepper
  • a few drops light soy sauce
  • a few drops oil
  • 20 g carrot, minced
  • 1 tbsp green peas

Bun

  • 75 g plain flour
  • 175 g bread flour
  • 45 g castor sugar
  • ½ tbsp salt
  • 25 g butter
  • 5 g instant yeast
  • ½ tbsp bread improver
  • 100 ml water
  • ½ egg, beaten

Method:

Filling

  1. season chicken with salt, pepper and light soy sauce.
  2. Heat oil and fry chicken for 5 minutes.
  3. Add carrot and green peas. Fry and mix evenly.
  4. Remove from heat and leave to cool.

Bun

  1. Mix all bun ingredients, adding water last. Knead mixture to a smooth dough.
  2. Cover the dough with a plastic sheet and leave it for about an hour to rise.
  3. Cut the dough into equal portions of 25 g each
  4. Using your hands, roll each dough portion into a bun and leave to rest for 20 minutes, covered with a tea towel
  5. Wrap the filling in the middle of each portion of dough and leave for about 45 minutes to 1 hour until it expands to one and a half times its size.
  6. Brush the top of each bun with beaten egg and bake in a 180°C oven for about 15 to 18 minutes or till cooked.
